At the Professional Culinary Institute of California, your baking and pastry education will prepare you to enter a wide variety of positions at bakeries, pastry shops, restaurants, hotels, or any number of professional establishments in as little as six months.

As you work towards a Diploma of Essential Professional Baking and Pastry Skills, you will receive personalized, hands-on baking and pastry training in everything from pastry dough, cake production, fillings, cakes, pies, cookies, tartlets, and creams, to the science and skill of baking bread, international dessert recipes, and one area that melts even the hardest of hearts, the many forms and uses of chocolates and candies.

Your baking and pastry education will also cover the presentation of plated and buffet desserts, and everything from composition and design to the use of fondants and marzipans. Safety and sanitation will complete the program.
